Shrimp Florentine Pasta

Ingredients

    8 oz uncooked fettuccine
    2 Tbs butter
    1 lb large shrimp, peeled and deveined
    1 Tbs chopped garlic
    1 tsp crushed red pepper
    1 Tbs fresh lemon juice
    1/2 tsp salt
    1/2 black pepper
    1 (10 oz) package fresh babby spinach

Directions

Cook pasta according to package directions, omitting salt and fat. Drain well; set aside, and keep warm.

Melt butter in a large nonstick skillet over medium heat. Add shrimp, garlic, and crushed red pepper; cook 4 minutes or until shrimp are done, stirring occasionally.

Add cooked pasta, lemon juice, salt, black pepper, and spinach; cook for 3 minutes or until spinach starts to wilt, stirring to combine.

Serve immediately.

Serving Size: 4 1 3/4 cup servings

  • It's interesting that SP calculates the calories as being less than the magazine does. (by 30 so it's not a huge deal) I add bout a cup of chopped mushrooms and a can of diced tomatoes (Drained so it's not too soupy) It's a great dish, I love it! - 7/11/12
