Ingredients


    Ingredients:
    *Quinoa - truRoots organic quinoa (dry), 2 cups
    *Beans-Black Beans - Progresso, 1 can rinsed
    *Fresh Oregano, 2 tbsp
    *Fresh cilantro, 3 tbsp
    *avacodo (1/2 med), 1 serving
    *Red Onion (1serving = 1 med onion), diced
    *FRESH: Tomatoes, Ripe, Red i cup chopped
    Spinach, fresh, 4 cup
    *Pace Chunky Salsa - Mild, 2 tbls
    *Old El Paso Taco Seasoning, 4 tbls
    Tortilla Chips, 1 bag (7-1/2 oz)

Directions

cook quinoa as directed.
open and drain beans. then rinse.. add to qunioa with fresh oregano and cilantro.. add taco seasoning.. stir reduce heat till liquid is absorbed and qunioa is done. Mean while chop all veggies to bite sized pieces.. heat tortilla chips in oven ( i use world table harvest multigrain from wal mart) start plating.. chips on bottom.. then spinach. then qunioa bean mixture, add all toppings and add a squeeze of fresh lime. sour cream and cheese can be added . i am not veagn but enjoyed this as a vegan meal. it was GREAT!
