Vitamix V8 Juice (approx 2-1/2 to 3 c)

Number of Servings: 2

Ingredients

    1 very small carrot (carrot makes the drink very fibrous)
    2 stalks celery
    1/2 slice of zucchini
    1/2 slice of yellow squash
    2 cups spinach (or just a pinch, if you want the color to stay reddish)
    about 1/4 of a red pepper, seeds included
    4-5 campari tomatoes (approx 200-250g), or to taste
    pinch of sun dried tomatoes
    thin slice of onion
    small clove of garlic
    1/4 small lemon peeled
    1-2 dates
    A veggie bullion cube
    1 Tblsp of Blend It Up Spice or taco seasoning (optional)
    3-4 cups of ice
    1/2 - 1 cup water, as needed for consistency

Tips

"Sometimes it is like an ice cream and I have to pound and pound and pound the tamper over and over and over - well, you get the idea :-) but if it starts out REALLY frozen you have to blend a long time to get it "liquidy" and the longer you blend, the more the fiber gets blended. Because there is fiber in this drink, it will never have the texture of a V8, but if you blend the fiber to smithereens like this, it isn't as "gritty" as it would be if only blended for 30 seconds or so with water. If you don't like cold drinks - that's ok - just keep blending until it is the temperature you like! (but still start with ice unless you don't mind the "grittiness")."

Directions

Put all in the Vitamix, turn on as variable speed 1, turn up to 10 then witch to High speed. Tamp as needed. May need to add water, depending on consistency desired.

Serving Size: Makes 2 servings, approx 2-1/2 to 3 cups each
