SINCRONIZADA

Introduction

SINCRONIZADA is a Mexican dish, usually had for breakfast or dinner. The usual version has a slice of ham and a slice of cheese sandwiched between two tortillas (either flour or corn), all of this is fried and then bathed with salsa.
My version has more veggies and is only heated or fried in a minimal amount of EVOO.
This plus a fruit or two would make a complete meal in a 1500 calorie diet and will get you almost half the dietary fiber you need in a day.

Ingredients

    2 corn tortillas
    1/2 cup refried beans
    1 oz Smoked Turkey Breast
    1/2 cup cooked spinach
    1/2 cup cooked mushrooms
    1/4 cup cooked red onion (it could be any type of onion)
    1 oz queso asadero (you may substitute for another low-fat cheese)
    4 tbsp salsa verde (or red salsa)
    1 tsp EVOO


Tips

To save some calories do not use the evoo and just heat the sincronizada and douse with the salsa. This will give you a soggier tortilla but you will save about 36 calories.
You may also try exchanging the veggies or putting fresh ones (tomato, onion, green chile, etc) in instead of cooked ones. As I was trying to reach my veggie allowance I opted for the cooked ones that take up less space.
I sometimes make this meal the night before, without the salsa, wrap it in foil and reheat it in the microwave with the salsa on top and it turns out fine the next day.


Directions

Divide the refried beans and spread them on the two quesadillas. On top of one of them place the smoked turkey breast, then the cooked spinach, the cooked mushrooms, the cooked onion, top with the cheese and cover with the other beaned-tortilla (bean side towards the rest of the food).
Heat a skillet and once it's hot, lower the heat and put half the evoo in it (you could also use spray), place the sincronizada in the skillet and heat it for 2-3 minutes, putting the rest of the evoo in the skillet when you turn it (tortilla tends to absorb the oil so you need to re-oil it when you flip it). Let it cook until the cheese is melted and the contents are hot (usually about 3 min on each side). Place on a plate and douse with the warm salsa.

Serving Size: Makes 1 serving of 1 sincronizada
