Ingredients

    4 large eggs
    1/4 cup low fat buttermilk
    2 ounces lean ham, chopped
    1 tablespoon butter
    1 tablespoon extra virgin olive oil
    2 scallions, sliced
    1 cup fresh spinach leaves, coarsely chopped
    1/2 cup shredded cheddar cheese

Tips

To go even lower in carbs, use cream in place of buttermilk.


Directions

Preheat oven to 375 degrees. Heat butter and extra virgin olive oil in 10 inch oven-proof skillet. Lightly sautee scallions and ham and then add fresh spinach leaves. Meanwhile whisk together the eggs and buttermilk and pour into pan. As edges cook, tilt pan to move egg mixture underneath. When edges are fairly dry, sprinkle with shredded cheese. Place in oven and bake for 10 minutes or until eggs are completely set and cheese is melted.
