Ingredients

    "chicken" salad
    3 tablespoons nonfat Greek yogurt
    1/2 teaspoon mustard
    1 teaspoon low-fat mayonnaise
    2 tablespoons chopped celery
    1/2 medium carrot, chopped
    1 tablespoon chopped parsley
    1 tablespoon chopped chives
    1 cup chopped cooked chicken

    Cucumber salad
    1 cup sliced cucumber
    a pinch salt
    1/4 teaspoon sugar
    2 tablespoons white vinegar
    1/2 teaspoon canola oil

    1 cup romaine lettuce

Directions

1)Combine all chicken salad ingredients minus the morningstar chicken strips.
2)Toss in chopped cooked chicken strips.
3) Whisk cucumber salad ingredients
4) Serve cucumber salad with chicken salad over romaine lettuce

Serving Size: 1 large...2 small
