Introduction

Great all-purpose loaf! Great all-purpose loaf!
Number of Servings: 48

Ingredients

    2 cups cooked oatmeal, or cook the following and then let cool.
    1 cup old fashioned oats
    1 cup almond breeze original, unsweetened
    1 tbsp raisins
    1 tbsp walnuts
    1/4 tsp kosher salt
    1 cup water
    cinnamon, nutmeg, splash vanilla

    2 cups white all purpose flour
    1 3/4 cup whole wheat flour
    1/4 cup oil
    3 tbsp honey
    2 tsp salt
    2 tsp yeast
    1/2 cup warm, not hot, water


Tips

I eat oatmeal often for breakfast, the odds and ends left in the pan get thrown in a tupperware in the freezer and when i have about two cups, i thaw it and make this bread!


Directions

put everything in bread machine and turn on to dough cycle only. when done. shape into three loaves and place in greased 7" pans. Let rise until double, or when you poke your finger gently into dough (about half a finger tips worth) the dough does not bounce back.) Bake at 350 for about 25 minutes - until bread registers 200 degrees on an instant read meat thermometer. (or nicely brawn sand sounds hollow when you tap the bottom of the pan - but i can never tell!)

NOTE: 7"are smaller than average, so can be hard to find. you can bake in two 8" loaves if you'd rather just adjust calorie count accordingly i like the smaller size loaf so that i have smaller slices and can eat a "whole" sandwich for the calorie count of one open faced one. :)

Serving Size: makes 3 7" loaves, 16 slices each
