Mini Vanilla Cheesecake

Introduction

This is a delicious low carb mini cheesecake which tastes amazing and is so so simple to make. This is a delicious low carb mini cheesecake which tastes amazing and is so so simple to make.
Number of Servings: 1

Ingredients

    Crust:

    15g ground almonds
    5g unsalted butter, melted

    Topping:

    40g Philadelphia cream cheese
    1g Splenda (0.5 tbsp)
    0.5 tsp vanilla extract

Directions

Preheat the oven to 350 degrees (Gas Mark 4).

Put the butter into a little ramekin pot and melt in the microwave. Mix in the ground almonds until it all sticks together. Gently press to form a crust at the bottom of the ramekin.

Bake at Gas Mark 4 for 10 minutes. Remove and cool.

Meanwhile, blend together the Philadelphia, Splenda and vanilla extract until smooth.

When the crust is done and cooled, gently place the mixture evenly on top of it and smooth out.

Put the whole thing in the fridge for at least an hour to set.

Serving Size: Makes 1 mini cheesecake
