Introduction

Number of Servings: 2

Ingredients

    2 T. Olive Oil
    4 minced garlic cloves
    1.5 cups chopped bell pepper
    1/2 cup chopped scallions
    1 T. Thyme
    About 15 small green olives (w/pimento), chopped
    1 Cup chopped tomato
    1 T. Balsamic Vinaigrette
    1 t. Cayenne
    1 t. Black Pepper
    1/2 t. salt
    1 pound White Fish Filet (Hake, Haddock, Cod)

Tips

Any white fish filet will do. Dinner should have a side dish to be more filling: a salad, antipasta, pasta portion, etc.


Directions

Sautee garlic, bell pepper, scallions, and thyme in olive oil over high heat for about 6 minutes.

Add olives, tomatoes, balsamic vinaigrette, cayenne, black papper & salt, mix thouroughly, and cook 3-4 for minutes. Set veggie mixture aside.

Using the same sauce pan (without washing it!), sautée the fish about 4 minutes on each side.

When done, spread veggie mix over fish and serve.

Serving Size: makes two dinners
