  • This recipe looks so easy...I read it and thought, "That's it?" I think I'm the only one in my fam who likes artichokes, so will have to keep that in mind. Can this be made ahead of time and frozen? - 2/17/09

  • I cut the recipe in half and used 8oz ff cream cheese, 1/3 cup light mayo, 2 tbsp ff sour cream, 1/2 cup grated parm, 1/2 cup kraft 2% 3 Cheese Blend, 1 clove garlic, and 8 rinsed then shredded canned artichoke hearts. It made 6 serv @ 170cal, 7g fat/each. It was easy to divvy out equal servings! :) - 1/31/09

  • This sounds so good! For a side dish to feed a crowd, add two boxes of frozen chopped spinach and a can of water chestnuts. It's one of my family's "most wanted" holiday side dishes. - 5/20/08

  • My husband makes a similar dip, except he puts whole roasted garlic cloves and spinach in his in addition to the artichokes. He also substitutes something for the mayonnaise, since I'm allergic to eggs. I think he just uses extra sour cream. - 5/20/08

  • I agree - use fresh artichoke and add more veggies, peppers, onion, tomato, spinach, whatever you like. The more veggies added the better! - 5/20/08

  • Thank You SALVORD for a voice of reason!!! The artichoke dip I make has regular mayo and plenty of Parm-- at least the one posted is healthier than that. And I'm sure it is just as good. - 5/20/08

  • Not every recipe people put on here is meant to be the most healthy of all time...some of these just offer healthier alternatives to foods that we may be tempted to eat. Besides, nothing is off limits in moderation....loosen up people. THANKS FOR THE RECIPE SUGGESTION SCAMINO! - 5/20/08

  • I haven't made this yet but I'm thinking that if neufchatel cheese were used instead and use possible even the "real" and not low fat stuff it might reduce the sodium. Often when an item is low fat, it actually has higher sodium and higher calories than the regular version.
    I will try it - 5/20/08

  • Sounds like one I make. I only use 1/4 of a cup of parmasean though and I add spinach, tomatoes, onions and hot peppers. You can also substitue soy cream for the sour cream which will cut fat and sodium. - 5/20/08

  • Looks good, but too much fat if you ask me. The Parmesan is the reason for the fat and sodium -- might taste just as good with less cheese... - 5/20/08

  • The sounds great but I agree with most that the sodium content is too high. Using fresh artichokes instead of canned may make a difference in that. - 5/20/08
