A versatile dish as soup, over rice or pasta or cold as salad; with peas, carrots, mushrooms, asparagus and a pineapple twist.

Number of Servings: 6

Ingredients

    12 oz cooked chicken
    1 can (15 oz) mixed Peas & Carrots
    1 can (14.5 oz) Asparagus
    1 can (7 oz) mushrooms
    1/2 can (10 oz) pineapple chunks in juice
    3 cups chicken broth
    Salt, Pepper to season
    a dash Lemon juice (optional)

Tips

For a fresher, tangier note add a dash of lemon juice.
Add 1 tbsp of mayonnaise (per serving) for a cold salad.


Directions

cut chicken into small cubes,
mix all ingredients in a3-4 quart pot and heat up. Season to taste with salt and pepper.
Serve warm over rice or pasta.
