Liz's Vege Slice

Ingredients

    1 leek
    Celery, raw, 3 cup, diced including leaves
    Parsley, 0.5 cup
    Egg, fresh, 5 large
    Colby Cheese, 1.5 cup, shredded
    *Peppers, sweet, red, fresh, 0.5 cup, chopped
    Carrots, raw, 2 cup, chopped (remove)
    Pepper and Salt to taste

Tips

Any veges on hand a suitable for this dish. Save a small amount of the cheese to sprinkle over the top before it goes intot he oven. Add more veg and more eggs for larger serving.


Directions

slice, dice and grate all the veges and cheese. Mix together well. Press In a lightly greased oven proof dish (glass is best) into. Lightly beat eggs with Salt and Pepper and slowly pour over vege mix. Cook in a med oven until eggs and veg well cooked, be careful not to burn. Serve hot or cold.

Serving Size: makes 6" by 6" casserole dish.
