Minestrone Soup

Number of Servings: 8

Ingredients

    1 can Tomatoes,
    2 cups Tomato juice, without salt added,
    1 cup Carrots, raw, chopped
    1 cup Cabbage, fresh, chopped
    1/4 cup Celery, raw,
    2 tsp Knorr Chicken Bouillon or vegetable bouillon,
    1/4 cup Beans, pinto,
    1/4 cup Beans, white,
    1/2 cup Green Peppers chopped
    1/2 cup green or yellow beans
    1 tbsp Olive Oil,
    1 tsp salt
    1 tsp black pepper
    1 tbsp oregano
    1 tbsp basil
    1 clove garlic
    onions


Directions

Heat olive oil in pot. Add garlic and onions. Pour in canned tomatoes and tomatoe soup. Mix bouillon as per instructions and add to mixture. Add all vegetables and simmer until vegetables are "al dente". Precook beans (unless you are using canned) and add to soup.

Variations - add some rice, noodles or barley.
