White Bean Crock Pot

Introduction

Number of Servings: 12

Ingredients

    1 bag small white beans (dry)
    2 tablespoons salt
    2 links sausage, chopped, casing removed (optional)
    1 large onion
    2 carrots
    1 large tomato, chopped
    2-3 cups low sodium chicken broth
    4 cups water
    1 tsp salt
    1/2 tsp black pepper
    1/4 tsp poultry seasoning
    1/2 bay leaf
    2 tbs lemon juice

Tips

you can sub turkey sausage, or skip it all together. Depending on your crock pot you may need to adjust the cooking time


Directions

soak dry beans in 8 cups water with 2 tbs salt
drain beans, rinse, and put in crock pot
add all ingredients except lemon juice
cook on low for 8 hours or until beans are soft
remove bay leaf and add lemon juice
