The Best Banana Bread Ever

Ingredients

    This banana bread is moist because you allow the banana to black, you know the ones we all throw in the garbage. The banana's that are oozing sugar.

    3 to 4 oozing black bananas, I mashed these oozing bananas in a glass bowl and allow to sit on counter for the day and if not ready to bake that day; I place plastic wrap over the bowl and let them sit in refrig for 1 to 2 days until I'm ready to bake.

    Pull banana mix from refrig allow to come to room temperature before baking.

    butter, melted in microwave
    sugar, egg, vanilla, baking soda, salt, flour

Directions

Preheat oven to 350 degrees.

3 to 4 blacken ripe banana's, smashed
1/3 cup butter, melted (microwave)
1 cup sugar
1 egg, beaten
1 tsp. vanilla
1 tsp. baking soda
Pinch salt (1/8 tsp. salt)
1- 1/2 cups flour

No need for a mixer.

In a large mixing bowl smashed your banana's, with a wooden spoon mix butter into mashed banana's.

Mix in sugar, egg, and vanilla.

Sprinkle the baking soda and salt over the mixture and then mix in.

Add the flour last and mix.

Pour mixture into a buttered 4 x 8 inch loaf pan.

Bake for one (1) hour. Cool on rack for 5 mins.
turn over onto foil to cool further.

To make this bread healthier you can add any of the following:

1/2 cup blueberries, 2 Tbspns flour to coat

1/2 cup quick cooking oats or

3/4 cup walnuts

but make sure if you add anything more to the above recipe that you also add an additional:
1/2 cup flour and 1/2 cup milk

Yields: 8 to 12 servings

depending on how you slice it.
