Greek Stuffed Chicken Breasts

Ingredients

    1.5 pounds thinly sliced chicken breasts, pounded thin
    1 pkg frozen spinach
    4 oz fat free feta crumbles
    1/4 cup chopped onions
    1 clove garlic, minced
    1 tbsp dill weed
    1 tbsp basil
    1 tbsp lemon juice
    salt & pepper
    toothpicks

Directions

Preheat oven to 350 degrees.

Line a baking sheet with tin foil.

Drain frozen spinach well and mix in bowl with cheese, lemon juice and spices. Take each thinly pounded chicken breast and top with approximately 1/4 cup of the spinach mix. Roll the meat around the stuffing and pin ends together with a toothpick. Place toothpick side down on the lined baking sheet.

Bake rolls for 20 minutes. Serve with rice and grilled veggies for a full Greek dinner!
