Spicy Three Bean Soup

Introduction

Ingredients

    2 chicken breast halves, skinned, boneless
    2 boxes of low fat, low sodium chicken broth
    1 28 oz can of tomatoes, diced or smashed
    1 10 package of frozen cut green beans
    1 10 oz package of frozen lima beans
    1 bay leaf
    2 tsp Creole Seasoning
    1 tsp chili powder
    1 tsp paprika
    1 tsp garlic powder
    1 tsp onion powder
    1/4 tsp cayenne
    2 dashes Tobasco hot sauce
    1 Tbsp soy sauce
    1 Tbsp Worcestershire sauce
    1 15 oz can black beans, drained

Tips

May use other types of bean if necessary. And can stretch this soup with the addition of more broth or water.


Directions

Combine all ingredients, escept black beans, in a Dutch oven. Bring to a boil over medium heat. Cover, reduce heat, and simmer for 1 houor. Remove chicken from soup: let rest to cool and shred meat. Return chicken to Dutch oven. Add black beans and heat thoroughly. Serve with bread, cornbread, corn torilla chips, or other bread.
