Ingredients

    1 8-inch whole-wheat tortilla
    3 oz sliced turkey breast
    1/3 cup shelled cooked edamame
    5 slices tomato
    1/4 cup (1 oz) shredded Swiss cheese
    2 tbsp salsa

Tips

This quesadilla would probably be better cooked in a toaster oven but I don't have one at work so the microwave works.

On half of the tortilla, layer all ingredients, topping with salsa. Fold in half; microwave 1 minutes.
