4 zucchinis, diced
1 medium onion, diced
1 can of sweet yellow corn
4 TBS olive oil
1 jalapeno, seeded and diced
Sautee all of the ingredients for 5 minutes, stirring well through the cooking process
Reduce the heat to medium, and cover the pan, simmering for 10 minutes. Stir often.
