Veggie Couscous

Introduction

Throwing in vegetables that you have in your crisper! Throwing in vegetables that you have in your crisper!
Number of Servings: 6

Ingredients

    1 cup Whole wheat couscous dry
    3 garlic cloves (crushed)
    1 small red onion (cut into strips or diced)
    1 red bell pepper (cut into strips)
    1 yellow bell pepper (cut into strips)
    2 Tbs. Sun-dried tomatoes shredded (not in oil)
    grape tomatoes 3oz (about 12 tomatoes, halved)
    1 zucchini (sliced)
    (season veggies with garlic salt, pepper, and cajun seasoning)
    1/2 cup of shredded carrots
    1 1/2 cups of water

Tips

Made with cajun seasoned lime tilapia.


Directions

Saute veggies in nonstick pan with cooking spray and a little salt and pepper. (adding in the tomatoes at this point is optional). Add in couscous and 1.5 cups of water. cover pan and cook for 3mins. couscous should be light and fluffy.
