Meatball Meatloaf

Introduction

I took bits of my Italian Meatball recipe and turned it into a meatloaf recipe. I have added oat bran instead of bread crumbs, on occassions I will use quick oats instead. Number of Servings: 8

Ingredients

    2Lbs Lean Ground Beef
    1 onion- minced fine
    1 carrot- grated fine
    1 garlic clove- minced
    1 cup fresh parsely (can sub cilantro is required)
    3 eggs
    1tsp Romano Cheese grated using the finest grater

Directions

Preheat oven to 350 degrees.
Put eggs and parsley in blender and blend until complelety chopped up (it will be very green). Chop onions fine, place in large bowl, grate carrots fine and place in bowl, add ground beef to bowl, mince garlic and add to bowl (or garlic can be chopped coarse and added to blender), add grated romano. Mix well add egg mixture, continue to mix well until the egg mixture is dispersed through the meat mixture. Add Oat bran slowly mixing between adds. Once you have enough oat bran the meat mixture will not feel "wet".

Place meat mixture in meatloaf pan. Pat the top down to make level then make a groove down the center from end to end. Spread the pizza sauce over the top and place in the oven . Cook for 45 minutes to one hour. Remove from oven and let sit for a couple of minutes before slicing.
