We have a garden so I have an overabundance of zuchinni and squash at this time. I have started throwing it in things to help use it up and add nutrition without calories for my family. This is one of those recipes. It is VERY low in fat and high in nutrients. It has 121.8 calories per 1 cup serving. It also has only .7 grams of fat per 1 cup serving. Ingredients

    Ingredients:
    Stewed Tomatoes,2 14.5 ounce cans
    Oregano, 1 tbsp dried
    Basil, 2 tbsp
    Chicken Breast, no skin, 12 ounces
    *Zuchinni fresh, 2 cup (I shredded mine because the kids like it better that way
    *Onion (Yellow), 1 med, raw,
    2 cups long grain white rice uncooked

Directions

Place the stewed tomatoes, zuchinni, oregano, basil, chicken breast, and onion in a pot. Heat to boiling. Cook until the chicken is almost done inside (about 8 minutes). Put in 2 cups of uncooked long grain rice. Boil until rice is tender.

Serving Size: 9 servings at 1 cup each.
