Summer Pasta Salad

Introduction

A light, versatile salad for really any occasion. Pairs well with mostly any sauce. A light, versatile salad for really any occasion. Pairs well with mostly any sauce.
Number of Servings: 8

Ingredients

    16 oz. box of pasta (I use orzo because i love the shape)
    1 bunch of Asparagus (I approximated 10 spears)
    1.5 fillets of Atlantic Salmon--cut 6"x3"
    Handful of Cherry Tomatoes
    Salt
    Pepper
    ~2 tbsps EVOO

Tips

This goes with ANY kind of sauce/dressing/topping/whatever. I've eaten this with everything from marinara sauce to just some Parm sprinkled on top. It's AMAZING. Also feel free to add veggies/ sub anything.


Directions

1. Grill salmon (season any way you want). I recommend some parsley.
2. Spread asparagus out on a cookie tray (covered with aluminum foil) and drizzle EVOO, salt and pepper to taste. Bake at 250* until tender.
3. Boil pasta according to directions on box.
4. In a large mixing bowl, break up grilled salmon. Chop asparagus and tomatoes, then add. Drain pasta, then add.
5. Mix lightly and add whatever sauce you crave, or just go plain.

Serving Size: makes around 8 1-cup serving
