Buttered Noodles with Squash

Ingredients

    8 ounces whole wheat pasta
    1/2 cup yellow squash puree
    1/4 cup 1% milk
    2 TBSP salted butter
    1/4 tps salt

Tips

*** To puree Summer Squash
Prep: Trim off the ends and cut into 1-inch pieces.
Cook: Steam for 6 to 8 minutes.
Puree: In a food processor or blender for about 2 minutes or until smooth


Directions

1: Bring a large pot of salted water to a boil. Add the pasta and cook according to the packaged directions until al dente
2: Drain, return the pasta to a warm pot, and stir in the squash puree (make sure the puree is creamy), milk, margarine, Parmesan, and salt.
