Mexican Bake

    1-1/2 lb 93/7 ground turkey
    Uncle Ben's Instant Whole Grain Brown Rice, 4 servings
    Nature's Promise Organic Black Beans, 1 can
    Corn, Green Giant Steamers (2/3 C Frozen), 3 serving
    Pepper - Yellow Bell (Raw, chopped) 1 Pepper, 4 oz
    Onions, raw, .33 medium (2-1/2" dia)
    Ortega 40% less sodium taco seasoning - 2 packets
    Rotel Mexican Deice Tomatoes w/ Lime Juice & Cilantro (1/2 cup serving size), 1 can
    Water, 3/4 cup


Preheat oven to 350F.

Combine cooked rice, black beans, and cooked corn and spread in the bottom of a 9x13 pan.

Brown ground turkey with onions and peppers. Add tomatoes and seasoning packets plus 3/4 water. Cook until most of the liquid has been absorbed. Spread over the top of the rice.

Sprinkle with cheese. Bake for 20 to 30 minutes until cheese is melted.
