Pampered Chef Mediterranean Dip Duo-altered

Ingredients

    Salsa:
    1/2 Cucumber, seeded and coarsely chopped
    1/2 chopped red onion
    1 plum tomato, seeded and diced
    1 can (3.25 oz) sliced black olives, drained
    2 tablespoons olive oil
    1 garlic clove, pressed
    1 teaspoon Italian seasoning
    2 ounces feta cheese

    Humus Dip:
    8 oz low fat sour cream
    8 oz hummus

    Pita Chips:
    6 whole pita pocket bread rounds

Directions

Slice cucumber in half and remove seeds. Chop cucumber and onion coarsely. Slice tomato in half and remove seeds, dice. Combine above ingredients, stir in oil, pressed garlic and seasoning. Gently add in feta cheese.
For hummus dip, combine hummus and sour cream together.
For pita chips: Preheat oven to 400. Split each pocket in half horizontally, cut each round into eight wedges. Arrange in a single layer and bake 8-10 minutes or until chips are lightly browned and crisp.

Serving Size: makes 12 servings, 1/4 cup salsa, 2 tablespoons dip, 8 chips
