Introduction

I wanted to make a "syrup" for my waffles that was healthier. Yes, this has more calories, but a good source of fiber and healthy fats. You could use less chia seeds if wanted as they mostly are a thickener. I wanted to make a "syrup" for my waffles that was healthier. Yes, this has more calories, but a good source of fiber and healthy fats. You could use less chia seeds if wanted as they mostly are a thickener.
Number of Servings: 1

Ingredients

    1 cup (about 100 g) frozen strawberries
    2 tbsp chia seeds
    1 tsp natural sugar (or sweetener of choice)
    scant 1/3 cup water

Tips

I used very little sugar as my berries were pretty sweet. If you have sweeter tastes you could add more sugar. I think maple or agave syrup would work too, though I would decrease the water a bit.


Directions

combine all ingredients in saucepan and place over med-high heat. Bring to a slight boil and reduce heat to medium. Cook and stir occasionally until strawberries break down and mixture thickens. Serve on waffles, pancakes or whatever.
