April's Broccoli Slaw

Introduction

I just came up with this salad - halfway between a coleslaw and a broccoli salad. My husband loved it. I just came up with this salad - halfway between a coleslaw and a broccoli salad. My husband loved it.
Number of Servings: 6

Ingredients

    1 bag Broccoli Slaw(12 oz-contains julienned broccoli stem, carrots and a little red cabbage)

    3 cups fresh broccoli chopped to small florets

    1/2 med. yellow onion finely chopped

    1 large apple - sliced thin and then cut into 1/4" wide pieces

    1.5 oz peanuts

    2 tsp sugar

    6 Tbsp Hellman's Light Mayonnaise

    1/4 cup lemon juice

    salt and pepper to taste

    white vinegar as needed

Directions

Mix together mayonnaise, lemon juice, sugar and pepper (about 1/4 tsp).
Prepare all veggies and apple and place in large bowl. Toss together with dressing and add white vinegar as needed for flavor and consistancy. Adjust salt as needed. Tastes best if given at least 15 mins to sit in the fridge
Makes 6 servings roughly 1.5 cups each
