Pulled Pork

Introduction

This is for easy weekend prep work meal that has multiple uses all week long. This is for easy weekend prep work meal that has multiple uses all week long.
Number of Servings: 6

Ingredients

    1.5 lb Pork Tenderloin
    1 (14 oz) can of petite diced tomatoes
    1/2 cup of cider vinegar
    Favorite pork rub
    Crushed red peppers

Directions

1. Dry rub pork with favorite pork seasoning. We use a local brand called J & O.
2. Set slow cooker to low and let it simmer for at least 4 hours.
3. Drain fat and liquid.
4. Add the can of petite diced tomatoes and vinegar and return to low simmer in slow cooker.
5. Occassionally stir and toss in a touch of crush red pepper for added "umph".

Serving Size: 4 oz. portion is 1 sesrving
