Introduction

Ingredients

    1-2 pounds lean beef
    2 large potatoes
    4 large carrots
    1 medium onion
    10 medium white mushrooms
    1 8 oz can tomato sauce
    3 tablespoons olive oil
    salt, pepper, cumin, garlic powder (or fresh garlic) to taste

Tips

At home I use a pressure cooker to speed up cooking time. This can also be done in a slow cooker. You can add any spices or herbs that you like including fresh garlic, bay leaf or oregano. Replace water with beef broth if you have any. Kids love this receipe if served over fun shaped macaroni instead of with bread. If stew is too thick add a little water.


Directions

cut beef into 2" cubes (or purchase already cut up). dredge cubes in flour seasoned with salt, pepper, garlic powder and cumin to taste. Heat olive oil in dutch oven and brown beef turning until all sides a well browned. Add enough water to cover beef (about 1 cup), one half cup (or one 8 oz can) of tomato sauce and the onion which has been peeled and cut into large chunks. Cook, covered over medium heat for about 20 - 30 minutes. While beef is cooking, wash and peel carrots and potatoes (if desired). Carrots should be cut into 2 inch pieces, potatoes into 2 inch cubes. Wash mushroom and cut any large ones in half. Add vegetables to the stew. First add carrots and cook for 5 minutes covered, then add potatoes and mushrooms. Cook covered over medium heat until potatoes and carrots can be pierced with a fork. Adjust seasonings (you will probably want to add salt and pepper) Serve in large bowls with crusty bread if desired.
