1 can (15 oz.) black beans, drained and rinsed
2 cans (15 oz.) yellow sweet corn
2 lbs. boneless, skinless chicken breasts
24 oz. salsa, mild
Brown rice (optional)
You may add 1/4 cup of water to the mixture if the salsa is really thick. Original recipe says to add 1 cup shredded cheddar cheese at end and heat in crock pot for additional 15 minutes or until melted. This just adds fat and it tastes great without it.
