Shrimp & Rice Asian Style

Ingredients

    7.5 oz cooked shrimp, chopped
    3 c cooked brown rice
    18 oz frozen mixed vegetables (broccoli, carrots, cauliflower), cooked
    1/2 c lite soy sauce
    3 T light brown sugar
    1/2 c rice wine vinegar
    2 tsp ginger (or to taste)

Directions

Mix soy sauce, brown sugar, vinegar, and ginger together in a small bowl.

In a large pot, combine rice, shrimp and veggies. Pour in sauce mixture and cook until bubbly and most of the liquid is absorbed.

Serve.
