Chia buckwheat crepes

Introduction

Crepes without eggs! Could be vegan if plant protein powder is substituted for whey. Single crepe recipe. It has a nutty, hearty taste. Filled, I wouldn't want more than one. Multiply for more. Ingredients

    1/2 T buckwheat flour
    1/2 T all-purpose flour (I usede gluten free)
    1/2 T protein powder
    no calorie sweetener (optional) just a sprinkle
    1/2 T chia seeds
    1/4 c water
    1/2 tsp coconut oil

Tips

I had this filled with greek yogurt and strawberries, with a drizzle of non-sugar syrup. Could also be used for savoury fillings (omit sweetener).


Directions

Combine chia and water and let it sit while you sieve the dry ingredients together onto a separate plate or bowl. Mix half the coconut oil with the chia slurry. Wisk in the dry ingredients. Add more water if necessary for a think batter. Swish the rest of the coconut oil in a nonstick small saute pan or crepe pan. Pour batter in and quickly swirl all around. When edges show a hint of brown, turn over and cook briefly.

Serving Size: Single crepe recipe; easily multiplied.
