Pancakes (Gluten & Dairy Free)

Number of Servings: 3


    1/4 C. Coconut Flour
    2 tbsp. potato starch
    2 tbsp tapioca starch
    1/4 tsp salt
    1 1/2 tsp baking powder
    2 eggs (room temperature)
    1/2 C. Unsweetened Almond Milk (any milk will do including dairy, almond is my preference. You will have to adjust nutritional information)


Whisk all of the dry ingredients together.
Add wet ingredients. Whisk thoroughly.
Spray hot pan (medium to medium high heat) with cooking spray. Put a small amount of the mixture down on the pan and watch for the top to look dry and bubbles on the side. Flip and cook on second side until nicely browned.

Serving Size: 6 pancakes
