Banana Maple honey muffins

Introduction

Number of Servings: 76

Ingredients

    2 c whole wheat pastry flour
    1 1/2 tsp baking powder
    1/4 tsp baking soda
    1/4 tsp salt
    1/4 tsp ground ginger
    1/4 tsp ground cinnamon
    2 large eggs
    1/4 c maple syrup
    1/4 c honey
    1/2 c packed light brown sugar
    1/3 c skim milk (can use whole as well)
    1/4 c canola oil
    1/4 tsp vanilla
    1 1/2 c mashed banana (about 4)

    Can add 1/4 c chopped nuts or all maple syrup.

Directions

Whisk dry ingredients together. Set aside. Whisk wet ingredients together, add banana, mix well. Add banana mix to dry, fold together, do not over mix.
Add nuts, if desired. Spoon into muffin tins. Bake at 375 degrees for 15 minutes for mini or 20-30 min for full size.

Serving Size: Makes 76 mini muffins or 12 regular muffins
