1 box Fudge Brownie Mix
1 cup mini marshmallows
Graham Cracker Cookies (Teddy grahams or similar)
Check the progress of the cooking in 30 second increments. Don't cheat and use a HUGE CUP!!
You can also cook the entire batch all at once, in a microwave safe baking dish. What I did was mix everything together, then popped the entire dish in the microwave. It took 3 - 4 minutes to cook.

Put 1/2 a serving of the graham cracker cookies in the bottom of a coffee cup. Sprinkle about 10 mini-marshmallows over those. Set aside.
Basically, whenever I cook sweets, I use applesauce rather than oil. So, make the brownie mix per the package directions, using apple sauce rather than oil.
Scoop enough of the brownie mix into your coffee cup, to fill your cup slightly less than 2/3 full. Tap the cup to get the mix down into the air holes.
place in microwave. Set on high. Cook 2 minutes. CHECK AFTER 1 MINUTE THOUGH.
Marshmallows and graham crackers will probably rise to the surface. Marshmallows will melt and make the brownie look under-cooked, but it typically is not. It just depends on the size of the cup.
2 minutes was longer than I needed, and my cup is HUGE ((holds 2 packets of hot chocolate - when I used to drink hot chocolate - lol))
When you are done cooking your brownie s'mores, let it sit to cool for a few minutes, otherwise you WILL end up with blisters in your mouth - I DID! I couldn't wait to try it. lol
Boy! Was it worth those blisters... until later. HAHA!
