Paul's Hungarian Stew

Submitted by: STECINA

Introduction

This is my dad's recipe from "the old country". The measurements aren't precise and I vary them from time to time based on the color and smell of the food as it's cooking. Number of Servings: 12

Ingredients

Stew meat beef cut into 1 inch cubes, salt, yellow onions cut into 1/4 inch pieces, paprika, bell peppers cut into one inch squares, tomatoes cut into one inch cubes, water.

Tips

Directions

Cut the stew meat into less than one inch cubes and brown it in a large stock pot with the onions cut into 1/4 inch bits and add the salt. Once the meat is brown and the onions begin to go transparent, stir in the paprika. Cut the peppers into one inch squares and drop them in the pot. Cut the tomatoes into one inch cubes and drop them in as well. Add water until all of the other ingredients are covered and raise it to a boil. Once it is boiling reduce the heat to just enough to keep the boil going. You may need to add more water (probably) in order to keep the ingredients covered. You'll know it is ready when the beef begins to break down. Serve over rice and think about my great dad and his delicious meals!

Serving Size: Makes 12 servings.
