Ingredients

    Whole rotisserie chicken
    Celery, chopped
    Carrots, shredded
    Light mayo
    Dijon mustard
    Salt and Pepper to taste

Tips

Makes a light and delicious lunch over greens.


Directions

Remove the meat from the chicken and cut or shred it, leaving out as much of the skin and fat as possible.
Add chicken, celery, and carrots to a large bowl.
Add mayo, mustard, salt and pepper to taste.
Mix well. Serve cold.
