Spinach and Shrimp Pasta with Garlic Olive Oil SauceSubmitted by: GENOVESEML3
IntroductionA good mix of veggies, shrimp and pasta for a healthy and filling meal. I usually make a little less if I'm having it for lunch, but it depends how hungry you are I guess. Fresh Spinach (or frozen)
1. you can also just cook the pasta as you are sauteing the shrimp and broccoli.
2. Don't use too much olive oil--we don't want to be frying anything.
3. If you cut them or leave them in whole, you might consider taking them out after the shrimp is cooked to avoid getting a large chunk of broccoli in one bite. You can also just leave them in as garlic is good for your heart and immune system, but it is mainly used here for flavoring.
4. Some people like their broccoli firmer, some like it fully cooked--- chef's choice :D.
