Introduction

Cauliflower tots as a bite size side dish. Serve with marinara sauce to add some more flavor. Cauliflower tots as a bite size side dish. Serve with marinara sauce to add some more flavor.

Ingredients

    Cauliflower, raw, 1 head, medium (5-6" dia)
    Egg, fresh, 2 large
    egg white, fresh, 1 large
    Oregano, ground, .5 tsp
    Basil, .5 tsp
    Garlic powder, .5 tsp
    Paprika, .25 tsp

Directions

cut the cauliflower into small florets, and put through a processor (I like the Ninja). place riced cauliflower into a mixing bowl and add 2 eggs and 1 egg white and all the spices. (may try crushed red pepper next time)
Use a cookie scoop to form balls and place on a cookie sheet sprayed with cooking spray. Place into a 400 degree preheated oven for about 25 minutes. then under the broiler for another 3-5 minutes. Good to serve with a pasta sauce or marinara.
