Rumbamel's Sweet and Sour Chicken w/Brown Rice and Veggies

Introduction

I had made some great brown rice and veggies the night before and decided to use the left overs for this great recipe. It's very easy to make. I had made some great brown rice and veggies the night before and decided to use the left overs for this great recipe. It's very easy to make.
Number of Servings: 6

Ingredients

    -1 lb. boneless skinless chicken breast
    -1/2 C Orange juice, I used 100% juice Tropicana
    -1 C unsweetened pineapple tidbits, drained
    -2 1/2 C cooked Minute Brown Rice (I cooked mine with the chicken broth) 1 3/4 C dry
    -1 1/2 C FF fit and Active chicken broth
    -1C diced veggies like carrots, onions, bell peppers
    -1 minced garlic clove

Directions

---Boil about 1 1/2 C FF Fit and Active chicken broth and then adding the about 1 3/4 C rice. Bring to a boil again, cover and reduce to simmer for 5 min.. Remove from heat, stir, add veggies and cover again for 5 min. or until moisture is absorbed.

---In another skillet cook your chicken over med./low heat. Remove when done and add the orange juice to remove the drippings. Add the rice and veggies, pineapple and then finally the chicken(chopped or diced to your liking). Stir and heat to warm.

---Enjoy!!!
