Lasagna Rolls

Introduction

Number of Servings: 12

Ingredients

    12 lasagna noodles, cooked (I used Whole Wheat ones)

    2 cans mushrooms- drained
    15 oz low fat Cottage Cheese
    1 egg (I used Egg Substitute)
    1/2 cup mozzarella cheese

    32 oz tomato sauce

    Spices to taste (I used garlic, onion powder, and a pinch of S & P)




Tips

(I stuck 6 on a tray and put in the freezer- once frozen I put in a freezer bag and will cook them for a later meal. I haven't tried it yet so can't confirm how well they freeze yet)


Directions

1. Preheat oven to 350. Mix together cottage cheese, egg, mozzarella, mushrooms & spices in a medium bowl. Spread 1 cup sauce evenly across the bottom of a 9 x 13 baking dish.
2. Spread pieces of wax paper out on your counter/table and place the flat cooked (but dry) lasagna noodles on top. Spread 1/3 cup mixture over each noodle. Roll noodle and place seam side down into the baking dish. Repeat with remaining noodles.

3. Spoon remaining tomato sauce over the lasagna rolls. Cover the baking dish with foil and bake for 40 minutes.
