Introduction

Variation on the Eades' recipe. I use 1 egg, 2 whites, greek yogurt and protein powderso it isn't vegan. This version is for one serving of about 3 crepes. Easily multiplied. This is just the crepes. Ingredients

    2 eggs
    1 egg white
    1/6 c greek yogurt
    1 T protein powder (plant fusion brand; whey would add a little more carb)
    1/4 tsp baking powder
    a smidgen of butter (1/4T) for pan

Tips


Directions

Wisk all ingredients except butter together, but don't overwisk. Let it rest a few minutes. Heat a nonstick 9-10" saute or crepe pan until a drop of water bounces. Add a dab of butter to pan and swirl around. It should foam, but not burn. Swirl 1/4 c batter around in pan. Let it cook until the edges start to pull away slightly. Center does not need to be cooked through. Use a wide spatula to turn it over for a minute. Keep crepes warm in 200F oven until all are done.

Serving Size: Makes 1 serving of 3 crepes
