Nearly-Vegetarian Chili

Introduction

This is a great introduction to using tofu. By using strong flavors and different textures, you can actually say, "You can hardly even tell it's in there!" Ingredients

    1 can black beans, drained and rinsed
    1 can kidney beans, drained and rinsed
    1 can Pork and Beans, NOT drained
    1 can Mexican-style diced tomatoes
    7 oz. extra-firm tofu, cubed in 1/4" pieces
    1 small onion, diced
    1 small pablano pepper, diced
    7 large cloves garlic, pressed
    2 tablespoons olive oil
    1 tablespoon ground cumin
    1 tablespoon Italian seasoning
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper
    1/4 teaspoon cayenne pepper
    1/4 teaspoon chili powder

    sour cream or crema Mexicana
    grated cheese
    fresh cilantro

Directions

Combine beans and tomatoes in a large pot and slowly heat over medium-low heat, stirring gently with a silicon spatula. In separate saute' pan, heat oil over medium heat. Saute' onion and pablano pepper in oil until nearly cooked; add seasonings and stir well. Allow to saute 1-2 minutes longer to awaken the flavors. Add tofu; stir. When tofu is heated through, add garlic. Saute 1 minute longer, then stir entire contents of saute' pan into beans. Simmer chili 5 more minutes to allow flavors to mingle. Serve topped with cilantro, grated cheese, and sour cream.
