Whey Protein Pancakes

Introduction

These pancakes cook up on the thin side and are nice for rolling up around berries and whipped cream or sausage and jam. These pancakes cook up on the thin side and are nice for rolling up around berries and whipped cream or sausage and jam.

Ingredients

    2 eggs
    1/3 cup plain greek yogurt
    2 tablespoons olive oil
    1/3 cup unflavored whey protein powder
    1 teaspoon baking powder
    Dash of salt

Tips

1/4 cup volume ice cream scoops are handy for moving batter to the skillet.

Directions

Whisk the wet ingredients together with a fork. Add the dry ingredients and mix until there aren't any lumps left. Set aside for 5 minutes.

Preheat a nonstick skillet or cast iron pan over medium heat. Spray pan with cooking spray. Stir and scoop 1/4 cup batter per pancake and pour it on the hot pan. Cook each side until golden brown.

Spray pan with more cooking spray and repeat.

These pancakes will brown faster than normal ones so keep an eye on them and turn down the heat if needed.

Recipe makes 6 thin pancakes. Serving size is 1 pancake.
