Whole Wheat Blueberry Belgian Waffles

Ingredients

    4 cups whole wheat flour
    5 teaspoons baking powder
    4 large eggs
    6 tablespoons melted butter
    1 teaspoon salt
    1 teaspoon baking soda
    4 cups lowfat buttermilk
    4 cups fresh blueberries

Tips

The recipe can be halved. The batter can also be used for pancakes.


Directions

Mix flour, baking powder, salt, and baking soda in a medium sized bowl. Beat eggs in a large bowl. Add melted butter and mix thoroughly. Blend in dry ingredients alternating with the buttermilk. Mix until smooth. Gently fold in blueberries. Let batter stand 20 to 30 minutes. Pour about 3/4 cup batter into each square of belgian waffle iron. Cook until done.
