Slow Cooker Mexican Black Rice

Introduction

Number of Servings: 4

Ingredients

    Hinode Black Rice-192 grams (1 cup)
    Garlic, Mini-cubes (Knorr), 1 cube
    Maggi Chicken and Tomato Flavor Bouillon, 1 tsp
    Rotel - Mexican Lime & Cilantro, 238 grams (1 10oz can)
    Water, tap, 1.75 cups
    Onions, raw, 1 small- chopped

Directions

Combine rice, and chopped onion in Slow Cooker
Strain Rotel tomatoes, reserving liquid.
Add tomatoes to Slow Cooker.
Add juice from Rotel can to a measuring cup and add enough water to equal 1 and 3/4 cups.
In a small sauce pan bring to boil Rotel juice/water mixture, bouillon and garlic cube.
Once boiling pour over ingredients in Slow Cooker.
Cover and cook on low for 2 hours.

Serving Size: makes four equal servings
