Mals veggie soup

Ingredients

    1 large eggplant, cut in cubes
    2 medium zucchini, cut in cubes
    9 ounces mushrooms, cubed
    1 large sweet onion, large dice
    1 large can crushed tomatoes
    32 ounces organic chicken stock

Directions

cut veggies in cubes and drop in pot
sautee for a bit until softened

Add chicken stock

Add crushed tomatoes

Simmer about an hour

enjoy
