Ingredients

1-12 oz. box Ancient Harvest Quinoa, unflavored.
1 can chickpeas, drained and rinsed
1 can black olives, drained and rinsed
1 medium red bell pepper, chopped
3 green onions, chopped
.5 yellow onion, chopped
.5 large cucumber, chopped
1 cup feta cheese, crumbled
dressing:
.25 cup olive oil
1 tbs. garlic, minced
1.5 tbs. lemon juice
1 tsp. dried basil
.5 cup fresh parsley, chopped
Tips
makes approximately 9-.5 cup servings
Directions
Cook Quinoa according to box directions, cool.
While that is cooling, mix dressing ingredients together with a whisk.
Combine all ingredients together, chill and serve.
