Beetroot and apple salad

Ingredients

    1 raw beetroot
    2 raw carrots
    1/4 raw cabbage
    1 raw apple
    1/2 cup walnuts
    1 Tb tahini
    1/2 cup parsley or other fresh herbs
    hummous (optional)

Tips

The proportions of the vegetables can be varied to taste. I prefer less cabbage and more beetroot, but that makes it more expensive.


Directions

Process all the vegetables/nuts/apple in a food processor until finely diced. Mix. Thin tahini and/or hummous with a little water or lemon juice until it's easy to drizzle over the salad. If you make your own hummous in the food processor, you can just not clean it before making the salad, and that will distribute the dressing nicely.

Serving Size: makes 5-6 servings as side dish, or 3-4 as main meal
